Method
 

  1. Preheat your skillet over medium heat and add a splash of oil, letting it warm until it shimmers slightly and smells toasty.
  2. Lay a tortilla flat on your cutting board, then spread a thin layer of refried beans across half of it, smoothing with the back of a spoon.
  3. Sprinkle a generous handful of shredded cheese over the beans, covering evenly for gooey goodness in every bite.
  4. Use cookie cutters or a sharp knife to carve fun or spooky shapes into the top of the tortilla, pressing lightly so the shapes stay intact.
  5. Carefully transfer the shaped tortilla onto the preheated skillet, pressing gently to ensure good contact with the pan.
  6. Cook for 2-3 minutes until the cheese starts to melt and the edges turn golden brown, filling the kitchen with a savory aroma.
  7. Using a spatula, carefully flip the quesadilla and cook for another 2 minutes until the other side is crispy and the cheese is bubbling.
