Ingredients

  • 4 cups ripe peaches, peeled and pitted preferably frozen overnight
  • 2 tablespoons fresh lemon juice adds brightness
  • 8 leaves fresh mint for flavor and garnish
  • 1 tablespoon honey or sugar (optional) for added sweetness, adjust to taste
  • 1 cup cold water or sparkling water to help blend and adjust consistency

Equipment

  • Freezer
  • Blender

Method

  1. Place the frozen peaches into a blender and add the lemon juice, honey (if using), and mint leaves.
  2. Pour in the cold water or sparkling water to aid blending and achieve your desired texture.
  3. Blend on high speed until the mixture is smooth, icy, and scoopable, with a vibrant pink-orange hue. You may need to stop and scrape down the sides.
  4. Taste the mixture and adjust sweetness or acidity by adding more honey or lemon juice if needed, then blend briefly again.
  5. Pour the slushie into glasses, garnishing each with a fresh mint leaf for a pop of color and aroma.
  6. Serve immediately with a straw or spoon, enjoying the cold, smooth, and refreshing burst of summer flavors.

Notes

For an extra adult twist, add a splash of vodka or rum before blending. To intensify the peach flavor, freeze ripe peaches in advance and peel them easily by blanching briefly in boiling water then plunging into ice water.
