  • 1 cup vodka preferably good quality
  • 1 cup fresh mint leaves roughly packed
  • 1 cup fresh citrus juice (lemon or lime) for brightness
  • 1 small spicy pepper (such as jalapeƱo) seeds removed for less heat, or keep for more spice
  • 1/2 cup sugar granulated
  • 1 cup water for syrup
  • 2 cups ice cubes

Method
 

  1. Combine water and sugar in a small saucepan and bring to a gentle simmer over medium heat, stirring until the sugar dissolves completely to make a simple syrup. Add chopped spicy pepper during simmering for infusion, then remove from heat and let cool. Strain out the pepper seeds for a milder flavor.
  2. In a blender, add fresh mint leaves, citrus juice, cooled syrup, vodka, and a handful of ice cubes.
  3. Blend on high until the mixture is smooth, icy, and fragrant, about 30-45 seconds. The texture should be thick and slushy, with visible mint and chili bits distributed evenly.
  4. Add remaining ice cubes to the blender and blend again for another 10-15 seconds, until the mixture reaches a frosty, icy consistency with a vibrant color and aroma of herbs and spice.
  5. Pour the icy slushie into chilled glasses, garnishing with a sprig of mint or a slice of citrus for an inviting presentation.
  6. Serve immediately with a straw or small spoon, enjoying the refreshing, aromatic layers of flavor kept icy and visually appealing.

Notes
