Ingredients

  • 1 box store-bought cake (or homemade) preferably vanilla or chocolate flavor
  • 1/2 cup butter or cream cheese to help bind the cake crumbles
  • 1 cup confectioners' sugar for moistening and binding
  • 16 oz white chocolate or candy melts for the glossy eyeball coating
  • 1 cup cookie or edible gel for irises various colors
  • black food coloring or gel edible black gel or food coloring for pupils
  • Optional red food coloring or edible gel for veins or details

Equipment

  • Mixing bowls
  • Cake pop sticks or skewers
  • Melting pot or microwave-safe bowl
  • Baking sheet
  • Parchment paper
  • Spoons or dipping tools
  • Small paintbrush or toothpick for details

Method

  1. Crumble the store-bought cake into a large mixing bowl until it resembles fine crumbs.
  2. Add butter or cream cheese and confectioners' sugar to the cake crumbs, then knead until the mixture becomes moist, sticky, and easy to shape.
  3. Use your hands to roll the mixture into 1-inch diameter balls, then insert a cake pop stick into each and place them on a parchment-lined tray. Chill in the refrigerator for at least 30 minutes to firm up.
  4. Meanwhile, melt the white chocolate or candy melts in a melting pot or microwave, stirring until smooth and glossy with no lumps.
  5. Dip each cake pop into the melted white chocolate, ensuring full coverage. Tap gently to remove excess, then place back on the parchment paper to set.
  6. Once the coating hardens, use edible gels or cookie decorations to create detailed irises and pupils. You can apply black gel for pupils and add veins or red details for a creepy effect.
  7. Use a small paintbrush or toothpick to add extra glossy effects or veins, mimicking wet, bloodshot eyeballs.
  8. Allow all decorations to dry thoroughly for at least an hour before handling further or serving.
  9. Arrange the spooky eyeballs on a serving platter for a creepy Halloween display or enjoy them as a fun treat.

Notes

For extra realism, add tiny red veins or glossy highlights with edible gel for a wet eyeball effect. Keep the coating warm enough to dip smoothly, but not so hot that it melts the decorations. Chill the finished cake pops before handling to keep their shape.
