Ingredients
  

  • 4 large flour tortillas warmed briefly to make pliable
  • 2 cups leftover turkey, chopped leftover turkey moist and tender
  • 1 cup shredded cheese cheddar or Swiss cheese melty and flavorful
  • 1/2 cup chopped greens spinach or greens fresh or wilted
  • 1 tablespoon mustard or sauce mustard or spread optional, for flavor
  • 1 tablespoon butter or olive oil melted butter or olive oil for brushing

Method
 

  1. Lay out a warm, soft tortilla on your work surface and spread a thin layer of mustard or sauce if using.
  2. Evenly distribute chopped leftover turkey over the tortilla, leaving a small border around the edges.
  3. Sprinkle shredded cheese on top of the turkey, followed by chopped greens for a fresh pop of color and flavor.
  4. Carefully roll the tortilla tightly from one end to the other, pressing gently to keep the filling inside. Use toothpicks to secure if needed.
  5. Place the rolled-up tortilla seam-side down in a baking dish. Brush the top with melted butter or olive oil for crispness.
  6. Bake in a preheated oven at 180°C (350°F) for 15–20 minutes, or until the cheese bubbles and the edges are golden brown.
  7. Remove from the oven and let rest for 5 minutes to allow the fillings to set and make slicing easier.
  8. Slice the roll-ups into 1-inch pinwheels using a sharp knife, revealing the colorful layers inside.
  9. Arrange on a serving plate and enjoy warm, with optional herbs or a drizzle of sauce for extra flavor.
