Ingredients
  

  • 8 slices turkey slices preferably leftover or deli slices
  • 4 large whole wheat tortillas warm slightly for easier rolling
  • 4 slices Swiss or cheddar cheese optional, for melty texture
  • 1 cup lettuce or spinach crisp and fresh
  • 1/4 cup mustard or mayonnaise for spreading
  • 1 medium cucumber thinly sliced
  • 1 bell pepper red or yellow thinly sliced
  • optional additional fillings bacon, avocado slices, or crunchy onions

Method
 

  1. Wrap the tortillas in a damp towel and microwave for about 20 seconds until they become soft and pliable, making them easier to roll without tearing.
  2. Heat a non-stick skillet over medium heat and place the turkey slices in it. Cook for 2-3 minutes per side until they are warmed through and slightly browned, filling your kitchen with a toasty aroma. If using cold leftovers, you can skip this step or give them a quick warm in the microwave.
  3. While the turkey warms, prepare your veggie fillings by thinly slicing the cucumber and bell pepper. Wash and pat dry the lettuce or spinach leaves. Set everything within arm's reach for easy assembly.
  4. Lay a warm tortilla flat on your work surface. Spread a thin layer of mustard or mayo over the center, covering about a third of the tortilla to add flavor and moisture.
  5. Layer two slices of warmed turkey on top of the spread, keeping them centered for easy rolling. Add a slice or two of cheese if you like, followed by a handful of crisp lettuce and slices of cucumber and bell pepper for color and crunch.
  6. Gently fold the bottom edge of the tortilla over the fillings, then fold in the sides and continue rolling tightly until the wrap is sealed. Use a little pressure to keep everything snug, and if the tortilla cracks, warm it briefly again to increase flexibility.
  7. Repeat the process with the remaining tortillas and fillings, assembling all wraps on your cutting board or plate. Let the wraps rest for a minute to help the fillings settle and prevent spillage when sliced.
  8. Using a sharp knife, slice each wrap diagonally into two halves to make them easier to eat and more appealing to serve. Serve immediately or wrap in foil for portable snacks.

Notes

For extra flavor, sprinkle fresh herbs like cilantro or basil into spreads. To keep wraps fresh longer, store tightly wrapped in foil or plastic in the fridge for up to 24 hours. Reheat briefly if desired, but best enjoyed fresh for maximum crispness and flavor.
